Allegory

Allegory is our Saumur white cuvée (100% Chenin), coming from two small plots 'Les Gorys' located on the slopes of Parnay. The plots are braided. The grapes are sorted and then pressed. The vinifications are carried out in barrels. The wine is aged for about 12 months in barrels to reveal the complexity and richness ofChenin without weighing down or oaking the wine. Malolactic fermentation does not take place. The wines are kept for one year in bottles before being marketed.
